It allows a hot casserole, brought to a simmer on the hob, to continue slow cooking in the oven for 4-5 hours without the oven even being turned on, in the style of a traditional hay oven. So the dish cooks whilst on the move, and will be ready for your arrival, and saves valuable electricity.
